~Yummy Banana Bread!~

~This is when I made 45 loaves of this Banana bread for Bible Day and for a youth camp for our 2 churches.~

Yummy Banana Bread
(I got this recipe from my dear sister Laura who got it from our good friend Lenita!)
Cream together:
1/2 cup oil
1 1/2 cups sugar (I use 1)
Add:
2 eggs
1/2 t. salt
3 ripe bananas
1 1/2 c. flour
Combine 1 t. baking soda and 1/3 cup sour cream, or butter milk ( I sour my own milk!)
Add alternately with buttermilk mixture and then flour mix until well mixed.
Can add choc. chips, or chopped pecans to the batter if you want! =)

Bake at 350 for 45 mins. (bake the muffins for less time...about 15-20 mins, or until toothpick inserted comes out clean.)
Yields: 1 Large loaf, or 18 muffins (give or take a few!)

(I tripled the recipe so I could make 5 large loaves at a time. That way I have some to give and some for my family. =)
Here's my multiplied recipe:
2 cups oil
3 cups sugar (YES, I PUT LESS SUGAR THAN IF IT WERE TRIPLED, BUT WE THINK THAT IT IS SWEET ENOUGH WITH 3 CUPS! =)
8 eggs
2 t. salt
12 ripe bananas, squished ( I blend them)
1 1/3 cup buttermilk or sour cream
2 1/2 t. baking soda
6 cups of flour
Add alternately with buttermilk mixture and then flour mix until well mixed.
Can add choc. chips, or chopped pecans to the batter if you want! =) (For baking times see above recipe!)

We had a good Sunday. I was able to go by taxi Sunday morning, but since there aren't a lot of taxis in that area we had to take a VERY BUMPY bus ride home, and that wasn't good on my back, so I stayed home Sunday evening. (For the bus ride Sunday night is WAY WORSE!!) We had good crowds in both services and God helped. Phillip always has a house service each week, and last week there were 25 people there, which was a record high. God is helping! My back is doing better, but I'm still having to be careful. I plan to try to find some help for my back this week if I can. Thank you for your prayers!

The banana bread sounds yummy! When my cousins were here last week, I had them make banana bread for me with some over-ripe bananas. They didn't realize there was a difference between TABLE spoons and TEA spoons and they put 2 TABLE spoons of SALT!!! We were doubling the recipe, and it was just SO very salty!!! Quite humorous!

Heather, I have no idea how you get all that baking done.....1 loaf cooks in 45 minutes. If you have to cook one loaf at a time that would be almost 2 straight days non stop cooking. You are amazing. Thanks for sharing. Michelle J

Thankfully the Lord gave me a big enough oven that I can cook all 5 loaves of bread at one time, so that saves me a lot of time! =)

You are always thinking of others. I know the Lord will bless you abundantly for your hard work and selflessness. I, too, was reminded of bananas I have in my freezer that need to be used. I just might have to use your recipe. It sounds yummy!

Wow, that would have been 8 of those triple batches to make 45 loaves. If I'm calculating right thats 96 bananas, and 64 eggs. HELP!!!
You are an awesome cook, and I was blessed to live close to you for 2 years and learn alot.

I made some of your banana bread the week of July 4th. So moist and yummy. Dan and Lorna DEVOURED it! The rest of us only got a slice or two. They always enjoy special breads but that one was a BIG hit.
