~Some fall baking, a recipe and some pics.~

~This is the kind of "pumpkin" we have here in Colombia. This is what I have used for anything pumpkin I have made so far this Fall. I think it is from the same pumpkin family, just does not have as strong of a taste as our pumpkin there, but hey, it works, so I'm happy!~
~Some yummy pumpkin pies that I made trying to see if that green pumpkin would work. Thankfully it is orange inside, so that helps, and it tastes very similiar to our orange pumpkin there.~
~These are the pumpkin muffins that some anonymous person put on my blog comments a few posts down. They turned out yummy, so I'm posting the recipe. (Now whoever you are...probably wish you would have included your name. SMILE!)~

Here's my favorite pumpkin recipe:

This is actually a double batch, with a 15 ounce can of pumpkin. I often quadruple the batch using the 30 ounce can of pumpkin.

Pumpkin Chocolate Chip Muffins

Combine wet ingredients and sugar:
4 eggs
2 cups sugar
1 1/2 cups oil
1 - 15 ounce can of pumpkin

Combine dry ingredients:
3 cups flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 tablespoon cinnamon (try pumpkin pie spice for variety)

Add dry ingredients to wet ingredients.

Add:
2 cups (or 1 - 12 ounce bag) semi-sweet chocolate chips (use other kinds of chips for variety -- especially the cinnamon chips).

Bake: 20-25 minutes at 375 degrees for regular sized muffins (definitely bake 25 minutes if you're taking them somewhere and sharing 'cause they'll get squishy. Bake 15 minutes for mini muffins.

Yeild: At least two dozen regular sized muffins.

This recipe also works well with whole wheat and olive oil.

Also - warning: These muffins WILL stain any tea towel or pretty cloth basket liner that you have. So, be careful. I usually use paper towels if I really need a liner. Or, buy brown cloth napkins or a dark tea towel so the stains won't show. :) Enjoy. I hope you like them as much as we do.

~Elijah cannot sit up by himself yet, but does NOT like to lay down unless he is sleeping, so Kimberly propped him up so he could see his toys.~
~Our Thursday night service. These people are happy with the new chairs too. Our family also bought those small rugs that you see under the chairs (we bought them for both churches) to kneel on, so all of our people don't have to kneel on the COLD, hard, and RED Waxed floor. (The churches here use them so that a person doesn't get the RED WAX all over their clothes.) I had Sarah go to the back and take this picture. I was sitting down on the front row holding Elijah, so you cannot see us.~
We had a good but VERY BUSY day on Sunday...I'll post some pics soon.

Pumpkin pie sounds pretty good right now. :-) That is Khara's favorite kind of pie! I think we are enough into the "fall season" now that I need to make one.

Elijah is getting so big. I can't wait for our little girl to get here. And she better be little. I'm thinking of posting some pic. of me for you. I just don't want to hear how BIG I am..lol Believe me I KNOW HOW BIG I AM!!! As I'm sure you did with Elijah too...lol anyways we miss you and love you all very much

Hey, all your pumpkin stuff reminds me of a cookie recipe that my family loves. If you like pumpkin muffins you'll love this one.

2 1/2 c. flour
1/2 t. baking soda
1/4 t. salt
2 t. pumpkin pie spice

(If you don't have pumpkin pie spice it's easy to make. 1 t. cinnamon, 1/2 t. ginger, 1/4 t. nutmeg 1/4 t. cloves OR allspice.)

1 c. dark brown sugar, packed
1/2 c. white sugar
3/4 c. salted butter softened
1 lg. egg
1 c. pumpkin
1 t. vanilla
1 c. rasins
1/2 c. walnuts, chopped

Preheat oven to 300. Mix flour, soda, salt and pumpkin pie spice in a med. bowl with wire whisk and set aside.
In a large bowl blend sugars with an electric mixer set at medium speed. Add the butter and beat to form a grainy paste. (I usually beat around 5 minutes, butter will turn a lighter lemony color) Add egg, pumpkin and vanilla. Beat at medium speed until light and fluffy.
Add the flour mixture, raisins and walnuts. Blend at low speed just until combined. Do not over mix.
Drop by rounded tablespoons about 1 1/2" apart. Bake 22-24 minutes.

Scott calls raisins "old lady food" and will not eat them, so I leave them out. I love pecans so I replace the walnuts with pecans. The recipe says to "whisk" the dry ing., but I like the old fashoned way best, sifting them together. There are no baking soda clumps to make the cookies taste bad. These are almost like little pumpkin muffins. Yummy

Sorry about the BG comment, I just like cookies much better.

Glad you liked the pumpkin muffins. No, I don't wish I had included my name. I don't blog 'cause I like to be anon. on the web. You don't know me anyway, so it doesn't matter. I'm a pastor's wife, too, and occassionally ask you for updates - particularly of the girl who fell on the rebar. My heart just goes out to her. I love fall and look forward to trying your Aunt Libby's cookie recipe. Oh, and I was going to say - I found your blog through Martha C. I don't know her either, but I'm a BJ grad, and found her blog when I was looking up something about BJ. So, I read Martha's blog occassionally to keep me updated on what's going on in Greenville. Now that Troy's finished with school, I don't hear much of that anymore. But, that at least explains how I found you. Oh, I also know Philip and Marianne B. from their time at BJ. I read their blog, too, but don't comment 'cause I don't have a login. I'm dying to know, though, where Mrs. B. (Philip's mom) got her pretty, feminine turtleneck that she's wearing in the birth announcement post of Stephen. So, if you happen to find out, I'd like to know.

An update on that little girl who fell on the rebar...as far as we can tell she is living a normal life and doesn't seem to have complications or infections from her fall. GOD IS AWESOME and we praise Him for touching her!
