(I got this recipe off of the internet. Janie Eisenhart made these for Comargo camp, but we were gone to my cousin's wedding and didn't get to try them. So when I got back here to Colombia I looked them up on the internet, made them and we LOVED them. I just served them with some choc syrup on top. (But you can serve them plain too or with cool whip and choc. syrup. Mine didn't raise very high due to being nearly 9,000 feet above sea level.)
Mini Oreo Cheesecakes
Servings: Makes approximately 15 mini cheesecakes

Ingredients:
1 package Oreo Cookies
2 (8 oz.) packages cream cheese, softened
1/2 cup granulated sugar
1 tsp. vanilla extract
2 large eggs
Foil or paper muffin cups
Instructions:
Preheat oven to 325 degrees F.
Place foil or paper muffin cups in regular sized muffin pans.
Split cookies in half. Put the side of the cookie that has more icing in the foil or paper muffin cups, icing sides up. Reserve the remaining cookie halves and set aside.
Beat together the cream cheese, sugar, vanilla, and eggs. Spoon mixture into the muffin cups about 3/4 of the way up. Crush the remaining cookie halves and sprinkle over tops. Bake in preheated oven for 20-25 minutes. Let cool, then refrigerate for 1 hour or overnight. Enjoy!!!
Makes approximately 15 mini cheesecakes.

Serve these little goodies topped with drizzled chocolate and a dollop of thawed non-dairy whipped topping.

~Noah put this phone up to Elijah's ear and then left and this is how Phillip found Elijah...laying in his bed "calling to talk" to his Grandpa D. and his Gramp. =D~
~Erasing Kimberly's 2nd grade PACES so that Sarah can use them.~
~Elijah had given me a rough night, and so I asked Kimberly to come and get him so I could sleep for a few minutes longer. When I got up...this is what I found...Kimberly doing her schoolwork at her desk with a sleeping Elijah on her lap. What a HUGE help our girls are to me.~
~Elijah says, "Look at me...I'm posing." (We wanted to show you how chubby he is getting.)
~If you look closely...you'll see my 2 new teeth. (A girl at our fruit and veggie market on Saturday said that my new teeth look like a mouses teeth. =)~
~Noah LOVES to put together puzzles. He put these 2 together...then when he got done...he started crying and told us that he wasn't feeling well. Sure enough, poor thing... he had a cold or something. Phillip fought a cold for some weeks, but thank the Lord he is better now (and so is Noah, now Kimberly has it.)~

The oreo dessert looks delicious! It reminds me of an oreo candy we make for the Holidays. You simply crush oreos and mix with cream cheese. You then form the mixture into little balls and dip in melted white chocolate! Talk about good! Mmmm! The pics of Elijah are so sweet and I agree with you that it is nice to have "Big helpers'!
Oh my goodness, little Elijah is such a cutie, he looks such a happy baby! I think that is wonderful that your girls are so helpful with him, I'm sure its a big help!

Yes, Aunt Libby...Elijah is so smart that he is already taking pictures at 4 months old. Hee! Hee!
No, we set our camera up on the special setting to take the picture of our family, so the "camera" took the picture all by itself. =) We love y'all.

Just found time this early morning to catch up what is going on in our "little girl"'s life. These days have been too full with Grandma's care and all that is going on here in Westfield. My heart often comes to Colombia and and I am glad that Jesus can go where it cannot go. I would love to give our Kimberly a hug right now, she looks so sweet being Mommy's helper. Do you have 'weight watchers' in Colombia? It looks like that Baby Elijah is going to need to go real soon. ;-) We are so thankful he is doing so well on Mommy's milk and pray soon that he can settle to a schedule to let you get more rest. How we would like to give him a big hug. Please give Sarah and Noah our love and a 'kiss on the nose'. Love Moma

My computer has been on the blitz, somewhat, and so have I. So, I'm just now reading this post of my family in Colombia. Elijah sure is happy when he isn't unhappy! lol! I love seeing what you guys are doing as a family. Dear Noah, doing his "work" on his puzzle until he finally could 'give up the ghost' and be sick in peace. He knows his family gets their work done, so he went ahead and finished his before he collapsed. And, dear little 'mother' Kimberly, helping take care of her baby brother. Meanwhile, I sure do miss my "Ruh Ruh", who tries to be such a good girl. We love you guys bunches. Mom D

We used a couple packages per pack of oreos. You need to make sure your mixture is creamy so if it seems dry than simply add more cream cheese ;o)
I would LOVE to get together with you one day and just bake all kinds of goodies! Wouldn't that be fun!? Maybe..someday..! Let me know when your next furlough is..;o)
