~YUMMY & QUICK Nutty Apple Muffins~

If an apple a day keeps the doctor away...think what a muffin will do. ~Heather =)
These muffins don't raise up high and beautiful, but they are very tasty!! =) Even my kids love them! They are so soft & yummy; I bet you can't eat just one!

~Nutty Apple Muffins~ (Best of Taste Of Home Recipes cookbook. The first 10 years!)
1 1/2 cups flour
1 1/2 teasp. baking soda
3/4 t. salt
1/2 cinnamon

2 eggs
3/4 cup sugar
1/3 cup oil (may need to add a tad more)
2 apples, peeled, and diced small.
3/4 cup flaked coconut (I wasn't sure about this, but our family liked the taste!)
1 1/2 cups chopped pecans
In a large bowl, combine the flour, baking soda, salt and cinnamon. In another bowl beat the eggs, sugar and oil. Stir in apples, nuts, and coconut. Stir into dry ingredients just until moistened. (I use my medium icecream scoop, to plop each muffin into 18 muffin cups, then I use it to squish each muffin in there.) Bake at 350 for 25-30 mins (or less!) Check with toothpick. Cool for 10 mins. Yields: 1 1/2 dozen. ENJOY!
~One day, I saw Noah with just a shirt on, and he was squatted down, covering himself with his shirt, for HE WAS SOOO COLD. So, I snapped a quick pic.~

How neat...I have apples in my kitchen and have that same Home Interior "country" thing hanging above my stove! Great minds think alike!!! The muffins sound yummy, but I'm afraid I COULDN'T eat just one, so I better not make them. I'll just look at the picture and "pretend" that I'm tasting them! UMMMM

Heather,
on that top you asked me about, you are correct on about everything you said. It does have elastic around the neck, waist and sleeve. For the waist I use bias tape and the put the elasic through that, but if you don't have bias tape you could just take a small pieace of fabric and turn under and make your own. Also on the sleeve I just stretched the elastic as I sewed it, but I did it about 1/4 in from the edge to give it the ruffle look on the neck I just turned the edge over and sewed it so you could not see the raw edge and then put the elastic through that. Then their are 4 total pieces one front, one back, and two sleeves, hope this helps you out. If you have any questions please let me know and I will try to help. I do work tomorrow so not sure how much help I would be unless you asked Beth and then she could call me or something. Good luck sure you will have lots of fun with your new machine would love to help you out.
