~Fun Food Friday...Skyline Chili~

~Yummy Skyline chili...minus the 1" of yummy cheddar cheese. =) I took this picture from our table here in Colombia back in Fall of 2008. We still hadn't found good cheese here in Colombia.
Now we can get good cheese, so we put a lot of cheese on our Skyline. ~

The Story of Skyline Chili.


From a small kitchen in the village of Kastoria, Greece, a fascinated young Nicholas Lambrinides watched as his mother and grandmother prepared authentic Greek dishes. Their recipes had been passed down from generation to generation. These were unique, wonderful dishes that had the power to bring his whole family together.

Nicholas dreamed that one day he would bring these recipes and traditions to America, where he could share them with friends and family. In 1949, his dream came true when Nicholas opened his first restaurant overlooking the skyline of Cincinnati, Ohio and began serving his delicious secret recipes to appreciative customers.

Since then, Skyline Chili's Coneys, 3-Ways and table-side service have
been enjoyed by generations. Our Chili continues to be made from
Nicholas's original recipe, using a secret blend of spices and only
the highest quality ingredients. Skyline is dedicated to bringing
friends and families together for an experience like no other and
we will always be devoted to the American dream of that young

At a Skyline Chili restaurant among lots of options, you can order a:
~3 way: Just the Chili sauce over spaghetti and cheese on top
~4 way: Beans in the sauce over spaghetti and cheese on top
~5 way: Beans and onions in the sauce over the spaghetti and cheese on top
~A bowl of just chili
~A coney: which is a hotdog in a bun with Skyline chili over it, with cheese on top.

Since Skyline Chili is served OVER spaghetti, we from Cincinnati, Ohio EAT THIS YEAR AROUND...even in the hot summer time.  =)
I have never made Skyline chili from Scratch...for by the time I got a recipe, I was not in the USA and couldn't as easily find all of the spices.  We use a pack of spices called, "Cincinnati chili" that we get at Kroger or Meijer in Ohio. In the pack is just the spices, and it has directions on the back as to what to add to that pack.  One pack makes one batch enough to serve about 8 people.
Here are a couple recipes you could try.

I got from Martha's cousin years ago.  Like I said, I've never tried it, but it sounds like a good recipe that I'd like to try some day when I can get all of the spices.  (I did make a few changes to tell you how I would make it.)
~Skyline Chili~
2 pounds ground beef
Optional:  2 cans of kidney beans   (If I used beans, I would probably only use 1 lb. hamburger unless I were doubling the recipe for a crowd.)
3/4 tsp. garlic powder
2 tsp. onion powder
3/4 tsp. paprika
1 tsp. chili powder
1/4 tsp. cinnamon
1/4 tsp. rosemary
1/4 tsp. all spice
3/4 tsp. sugar
1 tsp. salt
1/4 tsp. thyme
1/8 tsp. oregano
1 large can of tomato juice
This recipe says to brown your meat first, but the packages of Cincinnati Chili that we use say NOT to brown your meat, to cook it in your sauce.  I think that is one of the secrets to Skyline, is that your meat is boiled in the sauce and not fried to a crisp.
So, I would put my raw hamburger in my crock pot or in a large thick pan on top of my stove.  I would break up my hamburger until it is FINE using a fork.  Then add all of the other ingredients, and a little water to cover all.
~Simmer in your crock pot a good 4 hours or so on HIGH.
~On top of your stove bring to a BOIL and then simmer for at least 1 1/2 hours , stirring often.
Serve over cooked spaghetti with LOTS of cheddar cheese piled on top.  You can also serve it with diced onions if you desire.  You can also serve the sauce over hotdogs in the bun, and that is called a Coney!
The Lady that I got this recipe from said that her friend was nearly convinced that this was canned Skyline Chili.  =)

Thanks for the recipe, Heather. We have a Kroger store here so I will look for the package of mix. If I don't find it, I will use this recipe you have posted. I passed along a recipe for whole wheat muffins that you had a while back to my daughter-in-law who really makes an effort to cook healthy food for her family. They love the muffins. She has also made them for guests and they too loved them.

Neat story of how Skyline Chili came about. We are not big fans of it, but we like it. You make it look so yummy!
