~Strawberry scones~

My dear sister Laura (Missionary to Romania) sent me this delicious recipe! I'm posting it basically like she sent it to me. ENJOY! =)


Strawberry Scones

2 c. flour
1/3 c. sugar
2 teas Baking Powder
¼ teas salt
1/3 c. butter (Marg)
1 egg, beaten
1 teas. Vanilla
¼ c. whipping cream (since I didn’t have this I used Sour Cream)
¼ c. buttermilk (I soured my own milk, since I didn’t have B.milk)
1c. hulled and sliced strawberries (Laura used thoroughly drained canned ones… since she didn’t have fresh. I used fresh, so I think that either canned or fresh would work out great!) Or you could try diced canned peaches too.

Glaze: Brush on top of scones just before baking:
1 beaten egg mixed with 1T. whipping cream (again I used sour cream)
and then sprinkle sugar on top of each scone.

Combine dry ingredients and cut in butter until coarse crumbs. Put a well in center and set aside.
Whisk egg, vanilla, cream and buttermilk together, Stir into dry mix just till moistened. (b/c of our flour I had to had about ¾ c. soured milk). Fold in strawberries. Knead on floured board just until smooth about 10 seconds. With hands pat into a 7” circle and 1” thick. Slice into 8-10 slices and line on lightly greased cookie sheet. (Since I have 2 smaller children, I sliced mine into smaller pieces: 16 pie shaped pieces.) Brush with glaze mixture and sprinkle with sugar and Bake at 375o @ 15 minutes. Cool on wire rack. ENJOY!

BEST IF SERVED WARM! THEY WERE NOT HALF AS GOOD THE NEXT DAY, AS THEY WERE WHEN THEY WERE FRESH OUT OF THE OVEN! =)

Heather, those look very yummy, I'm anxious to try them!! My strawberries are about the size of my finger right now and very green, maybe a couple of weeks and they will be ready!! I love strawberries, remember my kitchen?? :-)

These look very good. You make me feel guilty. You're such a good wife/mommy - always baking and cooking and yet you and Phil are both maintaining your weight well! My poor family thinks they've really had a treat if I pull out the Debbie Cakes!:)

Kelly, thanks for your sweet comment on my blog....but please DO NOT feel guitly about not baking as much as I do. Like I said earlier...I LOVE TO BAKE, and it comes NATURAL FOR My Moma is a home ec teacher and has RIGHTLY been called the "Martha Stewart of the Holiness Movement". And BAKING is how I deal with my loneliness missing my family, my friends and the good ole USA, and how we deal with the sadness of culture shock too. So, bring out those Debbie Cakes with a PROUD smile...for you are a SPECIAL Mommy and you have talents that I do not have. (Besides, you have one more child than I do too! =)

This is the recipe for "Ritz Cracker Pie". It's a very unique pie and super easy, a plus when you have three children. :-)

20 Ritz Crackers, crushed
1 cup chopped pecans
1 1/2 t. baking powder
3 egg whites, at room temp.
1 C. sugar
1 t. vanilla
1 8 oz. carton whipped topping
1 oz. chocolate, finely grated


Mix crackers, pecans, and bak. pow.
Set aside. Beat egg whites, gradually adding sugar until peaks form. Add vanilla. Fold cracker mixture into egg whites. Pour into greased 9-inch pie plate. Bake at 350 degrees for 30 min. Cool. Top with whipped topping and grated chocolate. Refrigerate.

Forgot to tell you the pictures are so nice! Noah you can come and play but I am sorry to say I did take all the stuff to Goodwill!

Hi, Heather. I'm not sure if you remember me or not. My first year at GBS, was your last. Then, I was Nancy Hamer, a music major. Anyway, I enjoy reading your blog and looking at all the pictures. I love family pictures, dressing alike etc. It seems you do a great job of this even on a missonary's budget. I also marvel at your baking. Yum! You always serve it so attractively too. Truly it is a gift! Maybe someday, if you all ever come back from the mission field, you could get a job at "Taste of Home"....your pictures always remind me of that magazine! lol. keep up the good work...God surely is using you and your family.

I've been wanting to make scones for a long time. These look awesome. I doubt if I get to these for awhile....until our house gets finished in Indiana. But I'm saving the yummy recipe. Your baking amazes me!!!
