~Yummy Creamy Strawberry jello~
With just a TAD of summer left, I wanted to share this fun recipe that my sister Laura sent me. She got this recipe from Dee and Kiana.I may have changed the recipe some, but this is how I understood it. So...here's the recipe "according to Heather." =)
My family REALLY enjoyed this light dessert that almost tastes like homemade strawberry ice cream. (I googled it to try to give credit, but I couldn't find the original source of the recipe.)
~Creamy Strawberry Jello~
10 oz. fresh/frozen strawberries, divided in 1/2
3 oz. strawberry gelatin
2 c. vanilla ice cream
(I tripled this recipe for our family...and we were GLAD that there were left-overs to put in the 'fridge for later! =)
~Dice 1/2 of the strawberries to add to the COOLED MIXTURE LATER and Set aside.
~With the remaining 1/2 of
berries, mash with potato masher (or blend slightly in blender) and Add
enough water to juice to measure 1 cup; pour into large saucepan. (If using frozen strawberries, the recipe says to drain them first.)
~Bring to a boil over med. heat.
~Remove from heat; stir in gelatin and dissolve.
~Add ice cream, stir until blended.
~Refrigerate 5-10 min. JUST until thickened a bit.
~Fold in reserved DICED berries.
~Refrigerate until firm. *(or you can freeze it as my sister did and her family LOVED it!)
~Scoop out into pretty little frosted dishes (glass dishes that you put in the freezer ahead of time to "frost") and garnish with strawberries. =)
(or Laura garnished with Kiwi and LOVED the kiwi flavor with the strawberry.)
~Refrigerate/freeze any left-overs.
