~Happy Fall~

I LOVE FALL! My birthday is in the fall (November), My sweetheart and I started dating in the Fall of 1992, and I love all the yummy treats and smells of Fall. I LOVE baking all the fun treats like pumpkin cookies, pumpkin bars, apple nut muffins, pumpkin pie, apple pie, caramel corn, caramel to dip apples in, etc. Where we live in Colombia it is chilly and we have 2 rainy seasons a year, so it feels like fall all year long. I love to decorate with pumpkins too, but I have only seen 3 small ones in the 2 1/2 years that we have been here. I have lots of fun memories of Falls in the past...and plan to make a lot more this Fall with my precious family.

~We took lots of pictures trying to get one of Elijah's 2 bottom teeth that are coming in. I got so close to his face that he almost looks like a fish. =)~
~I love this yummy smelling "apple cider" candle that my dear sis-in-law Beth gave me, and the pretty keys that Janet gave me, and I love the pic of my kids' feet in this frame.~
~I like it that you can see Kimberly and Elijah through this mirror. Aunt Libby gave me these dried fresh leaves 2 years ago and they still have the WONDERFUL smell of Fall! YEA!~~Some more of the yummy smelling dried leaves from Aunt Libby.~

~My Moma wrote me an email and told me that I could take the tea light candles OUT OF THE ALUMINUM and that makes the apple candles look a whole lot cuter. (I posted about these apple candles on our Fri. and Sat. post below.) I love these fall leave salt and pepper shakers that Roseanne got me a couple years ago.~

Happy Fall...maybe next time you stop by...I'll have a yummy fall treat to share with you, like fresh baked pumpkin cookies. ;D

Your house looks so cute all decorated for fall. Fall is my favorite time of year as well.

Do you all have many pumpkins there is Colombia? I love to decorate with them as well!

Enjoyed your fall decorations! :-) I just hit yard sales & Goodwill & decorated some. I'll try to get some pics. Where did you get your square lamp? Very cute. Elijah is a dolly & I can see his teeth coming through. ;-)

That first picture of Elijah is absolutely adorable! This post was so much fun to read. It kept me in suspense and it was full of cute surprises. Your blog is one thing on this computer that I love reading. We love you guys! Mom D (and Dad D too.)

Here's my favorite pumpkin recipe:

This is actually a double batch, with a 15 ounce can of pumpkin. I often quadruple the batch using the 30 ounce can of pumpkin.

Pumpkin Chocolate Chip Muffins

Combine wet ingredients and sugar:
4 eggs
2 cups sugar
1 1/2 cups oil
1 - 15 ounce can of pumpkin

Combine dry ingredients:
3 cups flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 tablespoon cinnamon (try pumpkin pie spice for variety)

Add dry ingredients to wet ingredients.

Add:
2 cups (or 1 - 12 ounce bag) semi-sweet chocolate chips (use other kinds of chips for variety -- especially the cinnamon chips).

Bake: 20-25 minutes at 375 degrees for regular sized muffins (definitely bake 25 minutes if you're taking them somewhere and sharing 'cause they'll get squishy. Bake 15 minutes for mini muffins.

Yeild: At least two dozen regular sized muffins.

This recipe also works well with whole wheat and olive oil.

Also - warning: These muffins WILL stain any tea towel or pretty cloth basket liner that you have. So, be careful. I usually use paper towels if I really need a liner. Or, buy brown cloth napkins or a dark tea towel so the stains won't show. :) Enjoy. I hope you like them as much as we do.

Hello, Heather! Good to catch up on you all. You're such a good and thoughtful Mommy ... I'm thinking that my poor boys had - dare I tell - cereal, their first day of school!! :-) Everybody seems to say that they love fall the most. I like it more now that I'm married to a crop farmer b/c harvest is a busy exciting time with that, but I can't imagine the balmy days of spring and summer not being everyone's favorite!!! Green everywhere, gardens, flowers, sunshine.... Fall just keeps reminding me that COLD is on the way. :-( I do like the "cozy"ness of candles and baking, etc. once I finally accept the cool.
Hope you are keeping encouraged there. Elijah is such a cutie!!! I'm glad God gave Noah a brother.

Ha! That sounds like me, not taking the tealights out of their aluminum holders!

Fall is my favorite season too! Pumpkin pie a la Cool Whip is sounding particularly tasty right now.
