~RECIPE For MOIST chocolate cupcakes, family pics from GG's funeral, Helping my Parents clean up from a tree falling, Happy Easter!~

~HAPPY EASTER~
Tomorrow is Resurrection Lord's Day!
HE HAS RISEN ...
HE HAS RISEN INDEED!!!
~REJOICE...BECAUSE HE LIVES!!~
~Several years ago I found this recipe for these Moist Homemade chocolate cupcakes
which call for simple ingredients which one has on hands.
I made and decorated these to take over to Daddy and Moma's house.  I'll include the recipe below.~
Super Moist Chocolate Cupcakes
NOTE:  Before you start your cupcakes,
do this part of your icing.
Cook the following together in a small sauce pan
on stove top, stirring constantly til thick:
Slightly over 1/2 cup flour (or 10 Tablespoons)
and 2 cups of milk.
Place a piece of waxed paper over the
thickened mixture so it does not dry out and
place in the refrigerator to cool.
While that is cooling, make your cupcakes.

Cupcake Ingredients:

1 cup sugar
1 cup brown sugar, not packed
1 3/4 cup all purpose flour
3/4 cup cocoa powder
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water

Preheat the oven to 350 degrees.
Line 2 cupcake pans with 24 liners.
Sift together dry ingredients into a large stand mixer
bowl.
Add the eggs, milk, oil, and vanilla extract.
Beat for two minutes, scraping the sides as needed.
Add the boiling water and beat just until blended.
The batter will be watery.

Pour the batter into a large measuring cup or
bowl with a spout.
Evenly pour the batter into the cupcake liners.
Bake for 18-20 minutes, or until the
center of the cupcakes spring back when touched.
Let cool in pan for 5 minutes, then remove to a wire
rack to cool completely.

~YUMMY Fluffy Filling/Icing~
Taste Of Home
This is a yummy light cool whip type icing.

The first step of this icing recipe, (The first 2 lines
of it)
SHOULD HAVE ALREADY been DONE as I mentioned
above.

{Cook together on stove top stirring constantly til
thick:}
{10 T. flour (Slightly over 1/2 cup) in 2 cup of milk!
LET COOL!}

NOW:
Cream together with mixer:
2 cups sugar, 2 cups butter, 2 t. vanilla,

and cooled mixture.
Beat WELL..., scraping sides, for at least 5 mins.
to avoid your sugar being gritty.

Lasts on cupcakes out of fridge for a couple days,
doesn't work to refrigerate this icing.
I divided the icing in 3 bowels and dyed them
Spring colors.
This is buttercream icing has a cool whip consistency,
so doesn't work well for intricate cake decorating.
I used my 2 LARGE Russian tips to pipe on this icing.

~Some Family pics from GG's funeral~

It was SAD but God
gave us a beautiful Sunny Day!
How fitting for GG's always LOVED sunny days and
LOVED to be out doors!
It was sad not to be able to HUG, and that not all of us could be together, but we are thankful for the Sweet service we had, and hope to have a Memorial service with everyone later.

Moma wept so much, it broke my heart!!~
~Our Dear Friends Jim and Sheryl Hobbs
brought over yummy food from Craker Barrel...
that was SUCH a blessing.
(Others also brought food like Cousin Joyce and our Sweet friend Carm.)~

~When we got back home to our sweet children,
Kimberly made us some delicious fried okra, reminding us of sweet GG!!
~Josh came for a visit.
The Quarantine is hard on Josh and Sarah, so he came to see Sarah. :-) ~
~Josh took 5 of our children on a short ride in his nice car...
Then came back and got Sarah for a longer ride. :-)
~2 iced coffees that I made for Josh and Sarah.~
~Sam and Hannah Kennamon were in the area and came to see us.~
~We worshiped together Sunday AM with our own home service in which we sang 4 songs, Sam gave us a devotional, and Phillip preached a sermon.
Here we are on Sunday night watching Beavertown's service.~

~Mary and Abigail BEGGED me to let them do my hair.
Mary did 2 braids on me....
~And Abigail took out one braid and did the right side of my hair. :-) ~
~HELPING MY PARENTS~
~Heavy Tree limbs fell in Daddy and Moma's back yard...snapping their electricity line,
laying on top of their phone line, and crunching a shed.
Praise God it didn't hit their house!
So, our whole family went over to help them cut up the wood,
clean up their back yard, take apart the torn up shed, and
to get the tree limb off of their phone line.
It's hard to tell in this pic but the tree limb that Fell came all the way up to where
Sarah was taking this pic.~
~Phillip using a chain saw,
Mary and Abigail picking up sticks, Noah hauling logs.
You can see the smashed metal shed behind Noah.~

~We all helped, including Moma.~

 ~Moma's sweet welcome sign.~
~When we went to TN for GG's funeral,
we had pulled our trailer and brought back some furniture
for Daddy and Moma from GG's house.
So while we were there, our family helped move that furniture in for Daddy and Moma.~
~A selfie while we were spring cleaning Moma's guest bedroom and moving furniture in and out.~
~Their guest bedroom All set up~
~We brought food over to feed my parents and our family during our work day at their house.  This was our supper of homemade chicken noodle soup, and homemade Stromboli.~
~Dear Kimberly faithfully raked up a TON of the leaves in Gramp and Gram's yard
and burned them for them.~
~Elijah and Mary playing a game of speak out. :-D ~
~Tonight Phillip gave a devotional via Face time to our
Young people in Colombia.~
~The virus and Quarantine have brought uncertain times,
events have had to be cancelled, people have lost their jobs,
suffering physically, death, etc
But like someone has mentioned
EASTER HAS NOT BEEN CANCELLED!!!
Our Lord is still RISEN and sets on the right hand of the Father to intercede for you and Me.
May Each of us Draw closer to HIM and PRAISE HIM this Easter!!!
HAVE A WONDERFUL EASTER!!!

Heather, this is a beautiful post. I love it! You told details that we wouldn't have known, other than reading your post. I see love for others and love for each other, in this post. I see hospitality in this post. I see other's love for your family, in this post. And, I saw love for Jesus, in this post. I saw the end of an era, in the passing of GG. I love you and your family. All of you have been a real asset to this old world. And, by YOUR family, I mean Phillip, you, and your children. I mean your mom and dad and their children & spouses, your GG with her children and spouses, and your cousins with their spouses have been a blessing to others. And, it's all because your GG started out to serve Jesus. He makes his people special. What a hard worker your GG was! Thank you for sharing all of this interesting living with us! Much love, Mom D
